Halloumi & Cherry Tomatoes Scrambled Eggs
Serves 2
Ingredients

50g halloumi cheese, sliced

2 free range eggs
-
4 cherry tomatos, chopped

1 cup spinach leaves
-
1 tsp. butter
Method

Crack the eggs into a bowl and whisk vigorously. Season with salt and pepper

Melt butter in a non-stick fry pan over medium heat and pour the egg in the pan

Mix through the tomatoes, halloumi, and spinach and cook for a further 5-6 minutes
-
Whilst the egg is cooking, use a wooden spoon, gently push the egg mixture creating small lumps throughout
-
Serve the halloumi and cherry tomato scrambled eggs in a bowl
