Halloumi & Cherry Tomatoes Scrambled Eggs

Serves 2

Ingredients

  • 50g halloumi cheese, sliced

  • 2 free range eggs

  • 4 cherry tomatos, chopped

  • 1 cup spinach leaves

  • 1 tsp. butter

Method

  1. Crack the eggs into a bowl and whisk vigorously. Season with salt and pepper

  2. Melt butter in a non-stick fry pan over medium heat and pour the egg in the pan

  3. Mix through the tomatoes, halloumi, and spinach and cook for a further 5-6 minutes

  4. Whilst the egg is cooking, use a wooden spoon, gently push the egg mixture creating small lumps throughout

  5. Serve the halloumi and cherry tomato scrambled eggs in a bowl
