Steak Salad
SERVES 1
Ingredients…….
1 organic steak (rump, sirloin)
1 avocado – cut into slices - lengthways
5 baby tomatoes – cut each one into two
½ a pear – cut in to slithers
Handful of cashew nuts
10 Kalamata olives – sliced in two
¼ red onion – thinly sliced
½ green capsicum – thinly sliced
200g spinach – make sure to wash and dry before eating
1 tbsp. on Mexican spice (if you don’t like spicy the substitute or an Italian or Mediterranean spice mix
How to make…….

1.Rub your spice mix on to the steak with a small amount of coconut oil or EVOO – leave to marinate overnight or if you don’t have time then just leave for 30 minutes
2.Once the steak has been marinated place it into the pan and cook on a medium heat until It’s how you like your steak (rare, medium, medium to well or well done)
3.While the steak is cooking, you need to make the salad
4.Add your spinach, tomatoes, onion, olives, pear, capsicum and avocado into a bowl and toss everything together
5.Then heat a separate pan and add your cashews – lightly toast for 3-4 minutes
6.Once your steak is done – remove from the pan and leave to rest for 5 minutes
7.The slice your steak into pieces
8.Plating up time – put your salad on to your plate – then add your steak and the toasted cashews
9.You can add a dressing to this if you like but it is just as tasty on its own
