Ingredients

  • 300g raw chicken breast, chopped

  • 1 cucumber, chopped

  • 1 tomato, chopped

  • 1/3 red onion, chopped

  • 3 cups cos lettuce, chopped

  • 1/3 cup full-fat feta, crumbled

  • 30g black olives, pipped

  • 1 garlic clove, crushed

  • 1 tsp. coconut oil

  • 1 tbsp. olive oil

  • 3 tbsp. balsamic vinegar

 

 

Method

  1. Heat coconut oil in a non-stick fry pan and cook the chicken for 7-10 minutes. Season with salt and pepper

  2. Meanwhile combine the tomato, onion, cucumber, lettuce, olives and feta in a bowl

  3. Add the chicken to the bowl

  4. Pour the olive oil and vinegar over the salad

  5. Serve
