Ingredients

300g raw chicken breast, chopped

1 cucumber, chopped

1 tomato, chopped

1/3 red onion, chopped

3 cups cos lettuce, chopped

1/3 cup full-fat feta, crumbled

30g black olives, pipped

1 garlic clove, crushed

1 tsp. coconut oil
-
1 tbsp. olive oil
-
3 tbsp. balsamic vinegar
Method

Heat coconut oil in a non-stick fry pan and cook the chicken for 7-10 minutes. Season with salt and pepper

Meanwhile combine the tomato, onion, cucumber, lettuce, olives and feta in a bowl
-
Add the chicken to the bowl
-
Pour the olive oil and vinegar over the salad
