Peri Peri Chicken & Sweet Potato Wedges

 

Serves 2

Ingredients

  • 500g chicken breast

  • 3 cups sweet potato, cut into wedges

  • 6 cups green beans

  • 1 red onion

  • 1 garlic clove, crushed

  • 1 tsp. paprika

  • 1 tsp. thyme

  • 1 tsp. fresh chilli

  • 2 tbsp. olive oil

  • 1 tbsp. mixed herbs

 

 

Method

  1. Preheat oven to 180 degrees and line a baking tray with baking paper. Lay the chicken breast and red onion on the tray.

  2. In a separate small bowl add the olive oil, thyme, paprika, chili, and garlic and mix together. Rub the oil over the chicken breast on each side.

  3. Bake the chicken breast in the oven for 10 minutes.

  4. After 10 minutes remove the tray from the oven add the sweet potato on the tray. Sprinkle the mixed herbs, salt and pepper over the sweet potato. Place the tray back in the oven and cook for a further 25 minutes

  5. Whilst the chicken and sweet potato is baking, boil water in a saucepan over medium temperature and cook the green beans for 5 minutes. Drain the water from the beans and transfer back into the saucepan

  6. Divide the chicken, sweet potato wedges and green beans into three meals. Dish one serving of the chicken, sweet potato wedges, and green beans and refrigerate the remaining two meals to be consumed as leftovers for the next two days
