Protein Balls

Serves 12

 

Ingredients….

 ¼ cup of chia seeds

3.5 handfuls of mixed unsalted nuts

4 tablespoons of raw unsalted 100% natural peanut butter

2 tablespoons of desiccated coconut

2.5 tablespoons of cacao powder

1 tablespoon of coconut oil

10 medium sized dates – pip removed

Water (if needed to make ingredients slightly wetter)

 

How to make…..

1.Take your dates and remove the pip

2.Measure all of your ingredients out

3.Place the dates, chia seeds, nuts, peanut butter, coconut, cacao, and coconut oil in your food processor or vitamix. Check consistency and add a small amount a water if needed

4.Blend until all combined (remember not to blend so they are completely smooth – these are nice when they have a slight crunch from the nuts to them)

5.Once combined, empty mixture on to a plate and start to separate and make in to ball shapes. They should be medium size, around 35/40g in weight

6.This is when you can have some fun – roll them in a topping of choice. Anything from more desiccated coconut, crushed pistachios or hazelnuts or even goji berries

7.Place in the freezer for 1 hour to set

8.Remove from freezer and eat!

9.They can be stored in the fridge for a couple of weeks or keep in the freezer for up to 3 months and remove one

30 minutes before you wish to consume it.
