Dippy Eggs & Soldiers

SERVES 2

 

Ingredients…..

2 medium sized eggs

6 Asparagus sticks

6 slices of parma ham

Salt and pepper to taste

 

How to make…..

1.Bring a pan of water to the boil, adding a pinch of salt

2.Heat a frying pan with a small amount of olive oil or coconut oil

3.Cut the woody ends of the asparagus off

4.Take one asparagus stick at a time and wrap it in one of the parma ham slices (wrapping around the middle of the asparagus stick only)

5.Once you have done this to all 6 sticks, place in the frying pan and cook on a low to medium heat – making sure not to burn them – make sure to keep turning them so they evenly cook

6.Place the 2 eggs in the pan of boiling water and set a timer for 3-4 minutes

7.Remove the eggs from the water and place in egg cups

8.Once the asparagus is cooked – around 3-5 minutes – removed from the pan and place on a plate

9.Using a spoon or knife, remove the tops

10.Simply dip your asparagus in to them

11.Enjoy!
