Pancakes

SERVES 1

 

Ingredients…

 

1 medium banana

1 tablespoon of raw peanut butter

1 large egg

 

Topping

100g of full fat Greek yoghurt

10 blueberries

 

How to make….

 

1.Mash up the banana in a bowl – leaving a few lumps for some texture

2.Whisk the egg in a separate bowl and then incorporate in to the banana

3.The add the peanut butter in to the banana and egg mix and combine well

4.Heat up a frying pan with a teaspoon of coconut oil

5.Add the mixture to the pan – making a circle pancake

6.Cook on each side for around 1 minute each – there will be slight bubbles, this is a sign to flip the pancake over

7.Once cooked removed from the heat and place on a plate

8.Top with yoghurt and berries
