Banana Bread
Makes: 1 loaf (10-12 slices)
Ingredients
2 ripe bananas (medium to large size)
½ cup of desiccated coconut
2 cups of almond meal
1/3 cup of coconut flour
½ cup of coconut oil
½ cup of coconut nectar
3 large eggs
2 tablespoon of tahini
1 teaspoon of baking powder
How to make:

Preheat oven to 170 degrees fan assisted

In your cake mixer add the unpeeled bananas and mix until smooth and creamy

Add the almond meal and coconut flour in to the banana mixture

Add the desiccated coconut and keep mixing through

Add the coconut oil (needs to be soft or liquid form)

Then pour the coconut nectar and tahini in to the mixture along with the baking powder

Last but not least add the 3 eggs in – one at a time

Mix altogether until combined and the mixture has loosened up – it should be soft but firm

Line your tin with baking paper and pour in the mixture, making sure it’s all evenly spread out

Top with desiccated coconut and drizzle with some coconut nectar (you can play around with the toppings, try adding some banana and crushed walnuts)

Place in the oven for 1 hour or until firm to touch (reduce heat to 150 degrees half way through)

Remove from the oven and leave to cool in the tin for at least 30 minutes

Remove from the tin and slice into pieces
