Simple Salad

 

SERVES 2

 

Ingredients….

2 cups of Spinach

1 cup of Rocket

1 Beetroot

1 Pear

1 avocado

1 red, green or yellow capsicum

50g pepitas

1 red onion

 

200 g Salmon

 

Dressing

¼ cup of extra virgin olive oil with the juice of half a lemon and a pinch of Himalayan salt

 

How to make….

Wash the rocket and spinach and dry – add to bowl

Then remove the stone from the avocado and cut up into strips – removing the skin

Cut up the pear and cooked beetroot in to bite sized chunks

De-seed the capsicum and cut length ways

Remove the skin from the onion and cut in half, then slice in to strips – length ways

Add all of the vegetables to the rocket and spinach, and mix altogether

Toast the pepitas in a frying pan with a little amount of coconut oil until toasted, around 2 minutes

Add the pepitas to the salad and mix through

Make the dressing and choose your choice of protein and add to the salad – tossing it all together

Place a serve on a plate and enjoy!
