Zucchini Fritters

Ingredients…
1 Large green zucchini
1 large egg
25g of parmesan cheese
½ cup of buckwheat flour
¼ red onion
1 teaspoon of mixed Italian herbs – you can use fresh or dried
How to make…
1.Grate the zucchini and place in a bowl
2.Whisk the egg in a separate bowl and then add to the grated zucchini
3.Grate the parmesan cheese and add to the mixture
4.Chop the onion in to very small pieces and add to the mixture
5.Then add in the herbs
6.Slowly add in the buckwheat flour making sure to incorporate it all so there are no flour lumps
7.Heat up a frying pan with coconut oil
8.Separate the mixture into 3 medium or 4 small fritters
9.Cook on each side for 2 minutes
10.Once cooked – plate up and serve with poached eggs, handful of spinach and a ¼ avocado per serving
